What bears?
* 1 kg. Of mondongo
* 1 set of legs
* 1 / 2 kg. Chickpeas
* 1 / 4 kg. Ham crude
* 1 / 8 kg. Bacon
* 2 strips longaniza
* 2 sausages (not disrupt)
* 1 / 4 kg. Butter
* 2 potatoes, peeled and cooked
* 5 chopped tomatoes
* 2 white onion chopped
* 2 chopped sweet peppers
* Vinegar
* Salt
* Flour to thicken
* 1 tsp. Paprika
* Red recado
How to prepare?
Cook the mondongo with the “red recado” and salt with enough time to be properly cooked. When the meat is well-cooked, remove and put in a pot well covered.
The chickpeas are made cooking (you can soak in advance) in the beef broth until well cooked.
In a separate pan, fry the ham, bacon and sausages cut into small pieces. Already they are well fried, add tomatoes, onions, sweet peppers and paprika.
Add meat and fried to boiled chickpeas and let all boil slightly. Add flour casting moving slowly so as not to form lumps wait to be well thick and shut down.
How does it serve?
Serve in warm soup dishes well and add portions of the cooked potato heading into squares. Mmmm … do not forget to put on your desk or French bread bar.
