When the harvest land (better know as “la milpa” by the natural people) works in traditional form, in addition to maize other products like ibes, beans, pumpkin, espelón, sweet potato, yucca, etc. are put in. Aside, within the milpa a special place is destined (pach pakal) to seed other important products (Chile, tomato, cucumber and watermelon) that are taken advantage of for the preparation of daily foods.

From unmemorable times the milpa has played and continues playing an important role in the life of the Mayan farmer of Yucatan, because not only a maize, but a space where other products of consumption occur, such as. Buúl, beans (phaseolus lunatus, L.), iib (phaseolus lunatus, L.Var.), xpéelon (philodendron lacerum, Scout, Bar.), the pumpkin k´uum (curcubita moschata, Duchense), etc. But the greater preoccupation of the farmer has been seeds it of the maize, because it is the product that is consumed more and not only it represents his diet would feed but that is his force and its spirit.

The old Mayans had like main food the maize and that infinity of meals and drinks were prepared with this grain appraising. Between the meals we have great and heavy tortillas that are combined with meat of hen and mount turkey (pibil waaj); diverse stews with pumpkin, tomato and meat of deer were also prepared, of quail, (original foods of the zone), in addition to of wild dove or hen; the turkey and the pig that were engaged in of Spain. Between drinks it is the mass corn flour drink to which cacao is added to him. As it can be seen, then, until the moment the maize continues being the base would feed on the Mayan farmers and, largely, on the other sectors of the Yucatan population.

The promotion of milpa is continued practicing between the Yucatan farmers, although is inconceivable”… a so simple system so without advantages, has survived three millenniums between which are five centuries under the powerful western culture”. Perhaps this must to that milpa represents for the farmer not only one agricultural activity, but that locks up still a series of social relations: relatives, communitarian work, man-nature-Gods relation and, mainly, culture would feed. Therefore, the milpa can be considered like cultural axis of the Yucatan Mayan town.
